Week one of marathon training complete! I ran a total of 15.52 miles this week, the long run was 6 miles. It was hot and slow, it was a hot weekend in Chicago. Only 21 more weeks to go and close to 500 more miles. Friday night is pizza night for the foreseeable future, carb loading for Saturday morning long runs. I made my favorite pizza crust using Trader Joe’s white whole wheat flour. The dough was a lot drier, more like a tart crust than pizza, but still good. Topped it with salad greens tossed in this lemon Parmesan dressing <— best dressing eva! Filled our bellies before heading to a street fair in the neighborhood.
Saturday’s project…
Onion and Orange Marmalade. I could not resist throwing in a slice of cooked bacon, and I used chili flakes instead of fresh chilli. As suggested I shared it with an exceptional sister. Added bonus the exceptional parents were in attendance too.
The marmalade was a great addition to the cheese board. It paired best with the white cheeses. The empty jar answered the question of “Did everyone like it?”. A wonderful Saturday evening.
Sunday we went to a play and grabbed a fabulous small plates Italian dinner with some friends we have not see in quite sometime. Good times! Another quality weekend. Damn you Monday why do you always comes so soon.
I hate running, but soooo admire anyone that does it!
Hooray for week one complete! One of the attorneys I work with did a half marathon yesterday morning – I went to check his time and it said “no results.” Turns out he had to quit after mile 8 because of dizzyness and fatigue it was so hot!
Hooray for family time too – I could eat a cheese and meat try like that pretty much any day of the week. Glad you had a great weekend and yep, boo to Monday!
Oh man, the weather would for sure put a damper on the half marathon. What a bummer after training.

Indeed it is, lord knows I’ve stolen enough ideas from you. I used the bottom of my largest meat carving board, worked great. All items bought at Trader Joe’s. minus my marmalade.
It sounds like you had a wonderful weekend. I’m in favor of a national petition to extend the weekend to 3 days every week…possibly 4! As for the running, even the thought of doing that in the summer heat has me exhausted so good for you!!!

This sounds like a really good relish. I wish I had the recipe when my great aunt sent me home with a 10 pound bag of onions!
