I love dessert but am not a huge fan of baking, too precise for me. Finding an easy recipe to bake up is always a pleasure. Today we all had off for President’s Day and needed some activities to fill the day besides TV. The kids and I made these cherry brownies, as it so happens to be George Washington’s birthday. It seems the tale about him cutting the cherry tree down may not be fact, which is irony at it’s best. I told the kids the story anyway as we made these, always a treat to have sous chefs in my kitchen
Cherry Brownie Muffinsadapted from Hungry Girl1 box fat-free brownie mix1 C. Fiber One cereal1 C. lite cherry pie filing1/2 C. vanilla soy milk
Crush the cereal…
Add the milk to the brownie mix and crushed cereal…
Add the pie filling…
Stir it all together…
Scope into greased 12-cup muffin pan. We topped each muffin with a cherry, we had leftovers since we were using a large can…
Bake for 20 minutes…
It was a split decision in the taste test. The ten year-old love them, the four year-old ate half, plus the cherry, and announced he did not like them. Made a face and threw the rest in the garbage. I suspect they were not sweet enough for him. They are OK for what they are, though next time I will make them will a homemade brownie mix with cocoa instead.
