We celebrated valentines day on Sunday. I let the kids choose what they wanted for dinner to celebrate valentines day. They have cupcakes on the brain these days. Our sitter has been bringing them delicious cupcakes each Saturday. How awesome? Anyway, it is no surprise that they wanted cupcakes for their valentine dinner. The ten year-old decided on meatloaf cupcakes with mashed potato icing. I threw a few peas on for sprinkles. What a fun dinner for them!
Make your favorite meatloaf recipe, portion into a muffin tin and cook at 350 degrees for about 30 minutes. Top with mashed potatoes and peas. I made fresh peas, my first time, what the hell was I waiting for? They were so good, such a difference from frozen! Though the four year-old was not a fan of the meatloaf icing. I have some doubts as to if he is really my son, how do you NOT like mashed potatoes? Seriously. And he doesn’t like pasta either. Sheesh! My daughter ate two, she needs it. When she walked downstairs today from walking up I swear she was 4″ taller.
They both do love sweets, I made brownies for dessert. What the kids did not know was that the brownies had black beans in them. Rich, delicious and moist!
Us adults opted for blue cheese crusted filet mignon with herbed potato souffle, peas and a wonderful red wine. The husband cooked the meat to perfection. We also dined without the children. They happily played while we enjoyed our meal.
What a wonderful Valentine's day dinner! I love the meatloaf cupcakes and the brownies look amazing! NUM!
