Not so much alive, but still ya gotta admit it is fine looking. The husband was traveling all week and requested meatloaf for dinner. Poor thing has been eating out all week. 😉 I was happy to oblige, anything to keep the oven going. Our kitchen is a bit chilly in the back, open the microwave oven and you get a pretty cold breeze. Though it is am improvement from the 3rd floor where you can see your breath. The only downside of this plan was it meant I actually had to leave the house today.
Here is what I came up with…
Sexiest Meatloaf Alive!6 slices whole wheat bread1 cup skim milk1 lb ground beef, 85% lean1 lb ground turkey, extra lean1/2 t. Adobo seasoningI package of Lipton Onion Soup Mix1 t. kosher salt1/2 t. pepper1/2 cup flat leaf parsley, chopped3 eggs1/4 cup chicken broth1 cup Parmesan cheese, grated5 slices of bacon, halved1/2 cup ketchup1 T. mustard2 T. brown sugar
- Preheat oven to 350 degrees.
- Soak the bread in the milk for a few minutes in a large bowl.
- Add ingredients from meat thru cheese to the bowl of bread, combine all ingredients thoroughly.
- Shape meat into loaf, about 6 x 12, onto sheet pan with edges or roaster pan.
- Top with bacon slices.
- Combine ketchup, mustard and brown sugar. Spread on bacon.
- Bake for 1 hour.
Lipton onion soup mix makes everything better. I served it up with mashed potatoes, green beans that my sister-in-law canned this past Summer, and a nice Rioja from my brother and aforementioned sister-in-law. The green beans were so good, I must can more fresh vegetables next Summer! All five of us even sat down to enjoy it together. On a Friday night. Truly a fabulous family dinner. It may be no Ryan Reynolds but it was dreamy.
