We hosted a back to school Wagons and Wine in our front yard last night. Wagons and Wine is our neighborhood version of happy hour. It was a fun and great opportunity to unwind from a busy first week at school. For me, it was also an opportunity to put my Michigan peaches to use.
Peach Bruschetta
Whole wheat baguette, sliced and toasted
6 oz. Goat cheese
1 T. Honey (or to taste)
2 Peaches, sliced
Balsamic glaze
Mix the honey into softened goat cheese. Spread cheese on toasted baguette slices. Top with peaches and a drizzle of balsamic glaze. Alternatively you can drizzle with honey instead of missing into the cheese, omit the balsamic glaze.
i've yet to master the balsamic glaze – it always burns on me!
I have that problem more than not too. I cheated this time and a store bought glax. Actually, I found it at Aldi, which appears to be a Trader Joes' product re-labeled and sold cheaper. Or maybe it is vice-versa. It is delicious, especially on grilled vegetables.
