Bundt cakes are the ultimate in low maintenance cake making. Especially when it involves using a cake mix. There are countless ways to liven up a simple cake mix. The Cake Mix Doctor is my go-to for ideas. It has more than just Bundt cakes too. Block party season is here and there is nothing easier than providing a Bundt cake for dessert. Here is my favorite for a hot summer day.
Margarita Cake
1 yellow cake mix
1 small package lemon pudding mix
4 eggs
1/2 cup oil
2/3 cup water
1/4 cup lime juice
1/4 cup tequila
2 T triple sec
Zest of 1 lime
Glaze:
1 Cup powdered sugar
1 T tequila
2 T triple sec
2 T lime juice
Directions:
Preheat your oven to 350 degrees. Grease and flour a Bundt cake pan.
In a large bowl combine cake mix, pudding mix, eggs, oil, water, lime juice, lime zest, tequila, and triple sec. Beat for 2 minutes (until smooth). Scrape the bowl occasionally with a rubber spatula.
Pour batter into prepared Bundt cake pan. Bake for 45-50 minutes, or until an inserted toothpick comes out clean.
