We got a little bit of snow here in Chicago and with it came a few days of pause to the regular routine. Tuesday was already a planned day off to take the ten year-old to get braces. Well, the top braces anyway. She was pretty excited to get them on, and they have not bothered her too much so far. The storm was reported to start about 3 pm, so we decided to get the four year-old from school on the way home from the ortho so we would not have to venture back out. Good call as the storm hit right as scheduled. The snow wasn’t too heavy but the winds were strong. We woke up to a whole bunch of snow and a snow day for all of us.
With nowhere to go and an some free time it gave me a chance to try out some recipes and make the most of it. Awhile back we went to Revolution Brewing and had the bacon fat popcorn appetizer. I knew I had to try it.
Melt a few tablespoons of bacon fat in a large pot over medium-high heat. | |
Pour in about 1 1/2 of popcorn kernels. | |
Once the kernels begin to pop, cover the pot and let pop. | |
Give the pan a shake every now and then to keep the kernels from burning. Once popping slows remove from heat.I topped it with salt and grated Parmesan cheese. The popcorn is a decadent treat, very rich and delicious. A small bowl will warm the belly and make it happy, luckily since it is not the healthiest snack out there. The four year-old devoured a bowl of his own and he claims to not like bacon. Ha, I didn’t let on to him that there was bacon involved.
