While the husband was in East Lansing celebrate the big win I spent the weekend in the kitchen. Like all weekend. Totally by choice though, I was really looking forward to it. I wanted to get some of the end of the season goods canned and ready to enjoy come winter. As planned I pulled all the tomato plants out of the garden and got a boat load of green tomatoes. Plus I add a ton of vegetables from the farmer to put to use. I had a few recipes selected and did get to a few of them. Here is a run down of what I actually accomplished…
a batch of sweet heat treat from the salsa peppers in the garden
canned 5 quarts of caramel apple pie filling
canned a few jars of Betty Barrows’ Mild Green Taco Sauce
a green tomato sauce similar to this Spaghetti with Green Tomato-Bacon Sauce
pumpkin lasagna, one to eat and one to freeze, though I used winter squash
Pickled a few jars of radishes
Roasted root vegetables
Green Tomato Jam With GingerHmm, I am sure there was more, but I actually can’t recall. Tiring weekend but very enjoyable. Though I still have a large bowl of green tomatoes to to get to this weekend. Any suggestions?
